A very unscary introduction to boxing fitness learn how to throw a punch, stress relieve with paired padwork and finish off with a circuit.

Thursday 7pm - 8pm

The Thursday evening class is predominantly boxing based with paired padwork and a quick bodyweight finisher circuit.  

Saturday 9.30am - 10.30am

Lentil & Beet Balls 💕
I was trialing them with baby - did some warm in a tomato & veg sauce and some as finger food in mini wraps with avocado mash and/or hummus. Wraps won the baby tasteoff today - give it 24 hours it'd probably be a different story 🤣

The lentil bites were mostly courtesy of @connoisseurusveg - I was missing a couple of ingredients tho so had to amend slightly. The beet balls were @kateveggiedesserts
Fab recipes & super easy 🌱😊

Lentils balls:
3/4 cup green lentils; 1 medium onion; 2 garlic cloves; 1 cup rolled oats; 2 tablespoons tomato paste;1 tablespoon soy sauce; 1 tsp dried oregano; 1 tsp; dried rosemary; 1 tsp dried basil.

Cook the lentils in the stock 30 mins- drain any excess water.
Cook up onion & garlic 5 mins or so then set aside. Mix everything together and mush with hands. Place in balls on baking tray cook at 200 for 24 mins turning once.

Beet balls:
2 raw beets peeled & lightly blended; handful of walnuts lightly roasted then ground;
3/4 slice of bread ground to breadcrumbs; 1 red onion blended; 1 tsp dried oregano; 1 tsp dried thyme; 1 can kidney beans.
Mush everything together then form balls and cook at 200 for 30 mins turning once.

Roast aubergine and lentil lasagne....and it was Goooooood 😊 I roughly followed a recipe from the Veganuary website though I cheated and bought a vegan bechamel sauce from m & s (full of crap unfortunately but I'm still after finding a successful recipe for one).

I roasted aubergine slices separately then used 1 cup green lentils, onion, garlic, 2x carrots, 1x celery stick, 1x red pepper, 1x tin black beans, 1x tin tomatoes, 1 tbsp tomato paste, 1 tbsp soy sauce, 1 pint stock, 1 bay leaf, a spoon of corn flour and a sprinkle of thyme.

Cooked the onion & garlic added carrot, celery, lentils & stock cooked for about 20 mins (so water was mostly gone) then added everything else and simmered for about 10 mins. Added a little cornflour to thicken.

Layered the lasagne with the roast aubergine in the middle.

Delish. Was devoured instantly, a hit with all the fam!
